Cream Wafers

  1. 1 cup soft butter
  2. ⅓ cup whipping cream
  3. 2 cups flour
  4. Mix well butter, cream and flour. Chill.  Roll out dough ⅛” thick on floured surface.  Cut with 1 ½” round cookie cutter. Roll ⅓ of the dough at a time, keeping the rest refrigerated.  Prick each round three times with a fork and sprinkle with granulated sugar.  Bake on ungreased cookie sheet at 375 degrees for 7 to 9 minutes.  Cool and put two cookies together with filling.
  5. Filling:   Blend ¼ cup soft butter, ¾ cup powdered sugar, 1 teaspoon vanilla and enough cream to make it spreadable.  Tint pink and green.  I always make a double batch!
