1847 Oregon Trail Sourdough Bread

Ingredients
  • 1 c boiling spring water
  • ½ c room temperature spring water
  • 1 rounded tsp Mesquite or Pecan Honey
  • 2 tsp Celtic salt (or pink Himalayan salt)
  • 575g sifted flour (organic all purpose (Costco))
  • 150g of starter
  • 2 tbsp of avocado oil
Steps
  1. Add salt to boiling and room temperature water. Continue stirring.
  2. Sift flower into mixing bowl.
  3. After 5 min stir rounded tsp of honey into salt water until disloved.
  4. Once water is cooler (lukewarm), add 150g of starter to water. Stir until mostly dissolved.
  5. Add water mix to sifted flour.
  6. Mix in KitchenAid until dough comes together (not completely mixed).
  7. Cover bowl completely with dry towel for 45 min.
  8. After the the 45 min, add the avocado oil to dough & mix dough for roughly 1 min on speed 3.
  9. Mix for 1 min every ½ hour after, totaling 2 hr 45 min. Re-cover the dough with the towel each time.
  10. Sprinkle counter with flour, folding dough a few times.
  11. Lightly coat a large metal bowl with olive oil. Add dough mixture.
  12. Cover bowl with cellophane and let dough sit in bowl for 7 more hours in cool dark area. (For extra sourdough taste, add 3 hrs.)
  13. (Refrigeration slows the rising process).
  14. Coat bottom of cast iron pan with flour.
  15. Sprinkle dough mixture to avoid sticking.
  16. Pull & fold dough into itself without pushing it down
  17. Shape dough to oval (loaf shape).
  18. Sit in cast iron pan 1 to 2 hrs depending on rise. Cover with second cast iron pan (same shape and size) DO NOT DISTURB. Try to keep basic bread shape with very little disturbance. After 90 min pre-heat oven
  19. Pre-heat oven 480°
  20. Dust dough mixture with a light flouring.
  21. Cut pattern into bread.
  22. Use oven-safe dish to hold water (for moisture)
  23. Bake bread covered for 20 min.
  24. Drop oven temperature to 420°
  25. Sit pan with dough inside of pan that covered dough and bake for 10 more minutes uncovered.
  26. Let sit on wire rack for 1 hour to eat warm. 2+ hours for sandwiches & etc.
