Coconut Cauliflower Soup with Ginger and Turmeric

  • 1 medium onion, chopped
  • 2 teaspoons minced garlic
  • 2 carrots, peeled, chopped
  • 2 celery stalks, chopped

  • 2 teaspoons freshly ground ginger
  • 1 tablespoon freshly squeezed lime juice
  • 6 cups Thai Coconut Broth
  • 1 tablespoon finely chopped fresh mint or cilantro
