Spicy Ahi Tuna Poke
Ingredients
  • 1 pound fresh tuna, preferably sushi-grade ahi, cut into ¾-inch pieces
  • ½ cup thinly sliced scallion greens (from 3 to 4 scallions), plus more for garnish
  • ¼ cup mayonnaise
  • ¼ cup (1 ½ ounces) masago (capelin fish roe; see Where to buy and Substitutions)
  • Generous 1 tablespoon sriracha, or to taste
  • 1 teaspoon soy sauce or tamari
  • ¼ teaspoon fine salt, plus more to taste
  • Cooked hot rice, for serving (optional)
