Castle High Cornflake Cookies

Ingredients
  • ¾ cup butter, softened
  • ½ cup margarine, softened
  • 1 cup + 2 tablespoons granulated sugar
  • ¾ teaspoon vanilla extract
  • 2⅓ cups all purpose flour
  • ¾ teaspoon baking soda
  • 1 cup cornflakes, crushed slightly
  • 6 ounces chocolate chips, optional
Steps
  1. Preheat oven to 325°.
  2. In a very large mixing bowl, cream the butter, margarine, sugar and vanilla extract until fluffy white.
  3. Combine flour, baking soda and cornflakes.
  4. Add to the butter mixture until moistened.  Do not over mix.
  5. Stir in chocolate chips, if using.
  6. Scoop about 2 tablespoons and shape into balls.
  7. Place the balls of dough on ungreased cookie sheets and press down slightly.
  8. Bake in preheated 325° Oven for 20 to 30 minutes.
  9. Remove to cool on rack.

  • I cut original recipe in half.
