Sweet Potato and Kidney Bean Vegan Breakfast Burritos
Ingredients

  • 2 tbsp olive oil
  • ½ yellow onion chopped
  • 2 cloves garlic peeled and crushed
  • 2 tbsp tomato paste
  • 1 tbsp cumin
  • 1 tbsp chipotle chili powder
  • salt and pepper to taste
  • 1 sweet potato scrubbed and cubed into bite-sized pieces (I did not peel mine)
  • 1 28 oz can kidney beans rinsed and drained
  • 2 cups fresh water
  • fresh cilantro washed and torn as garnishment
  • subheading: For Building Your Breakfast Burrito:
  • 4 to 6 tortillas
  • 8 to 10 grape tomatoes diced
  • 1 avocado sliced
  • 2 to 3 handfuls baby spinach

  • hot sauce
