Ethel’s Oatmeal Cake
Ingredients
  • 1c oats
  • 1¼ c boiling water
  • 1 stick butter
  • Set aside.  Let stand 20 minutes.
  •  
  • subheading: Combine:
  • 1c brown sugar
  • 1c white sugar
  • 1⅓ c flour
  • ½ t soda
  • ½ t nutmeg
  • ½ t cinnamon
  • Beat 2 eggs into oatmeal mixture then stir all together.
  • Bake in a 9x13 at 350* for 30 minutes
  •  
  • subheading: Mix well and spread on cake:
  • 1 can eagle brand sweetened condensed milk
  • ½ c brown sugar
  • ½ stick of butter
  • ½ t vanilla
  • 1 c chopped nuts
  • 1½ c coconut
  • Bake 7 minutes
