Chinese Chicken and Potato Stew
Ingredients
  • 2 to 3 tablespoon oil
  • 4 star anise, whole
  • 3 dried red chilies, coarsely chopped
  • 3 bay leaves
  • 4 to 6 green onions, sliced, reserve ¼ for garnish
  • chunk of ginger (18 g or 5/8 oz), coarsely chopped
  • 6 garlic cloves, coarsely chopped
  • 3 lbs chicken thighs, boneless, skinless, cubed
  • 6 tablespoons light soy sauce
  • ¾ tablespoon of dark soy sauce
  • 1 tablespoon Chinese rice cooking wine
  • 1.5 tablespoons Sichuan Style Broad Bean Sauce, recommended
  • one 12 oz can light beer, Coors Light or similar, or water
  • 3 russet potatoes, cut into 3/8 inch chunks
  • 1 package of mushrooms, sliced
  • 1 red onion, coarsely cut
  • ½ teaspoon of sugar
  • salt, to taste
