  • ½ bell pepper diced (or use a jalapeno)
  • 1 stalk celery diced
  • 1 tablespoon chopped green onion
  • 1 tablespoon chopped parsley
  • ¾ cup mayonnaise
  • ¼ cup Creole mustard or use whole grain - or more to taste
  • 2 teaspoons cayenne pepper
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 6 hard boiled eggs chopped
