High Protein Chicken Salad (Mediterranean-Style)
Ingredients
  • 2 ½ pounds leftover rotisserie chicken, shredded
  • a large handful of dill, finely chopped
  • ⅓ to ½ cup marinated artichokes, finely diced
  • ⅓ to ½ cup black olives, finely diced
  • ⅓ to ½ cup dill pickles, finely diced
  • ¾ to 1 cup thick Greek yogurt
  • 3 tablespoons Dijon mustard
  • 1 tablespoon garlic powder
  • ½ to 1 teaspoon of cayenne pepper
  • one or two pinches of salt and pepper
