Gluten Free Coffee Cake Muffins
Ingredients
  • subheading: FOR THE CRUMBLE:
  • ½ cup ( 109 g) packed light brown sugar
  • 4 tablespoons ( 48 g) non hydrogenated vegetable shortening I use and recommend Spectrum brand
  • ½ cup ( 70 g) all purpose gluten free flour blend (I used Better Batter; please click thru for appropriate blends)
  • ¼ teaspoon xanthan gum (omit if your blend already contains it)
  • ⅛ teaspoon kosher salt
  • subheading: FOR THE MUFFIN BATTER:
  • 1 ¾ cups ( 245 g) all purpose gluten free flour blend (I used Better Batter; please click thru for appropriate blends)
  • ½ teaspoon xanthan gum (omit if your blend already contains it)
  • ¼ cup ( 36 g) cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cinnamon
  • ¾ cup ( 150 g) granulated sugar
  • 6 tablespoons ( 84 g) unsalted butter at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 ( 100 g (weighed out of shell)) eggs at room temperature, beaten
  • 1 cup ( 8 fluid ounces) buttermilk at room temperature
