Loaded Veggie Eggs
Ingredients
  • 4 whole eggs
  • 1 c cauliflower
  • 3 c fresh spinach
  • 1 garlic clove, minced
  • ¼ c bell pepper, chopped
  • ¼ cup onion, chopped
  • ¼ tsp black pepper
  • 1 tbsp oil of choice (coconut or avocado oil is good for high heat)
  • fresh parsley and spring onion for garnish
  • note: optional tomatoes on side if no potassium restriction
