Healthy and sweet cupcakes
Ingredients
  • 100g zucchini
  • 100g carrot
  • 50g brocolli
  • 50g spinach
  • 150ml of milk
  • ½ cup of cocoa powder
  • 125g of butter, melted
  • 1 cup brown sugar
  • 3 eggs
  • 1 cup plain flour
  • ½ tsp bicarbonate powder
  • ½ tsp baking soda
  • ½ rolled oats
  • ICING
  • ½ cup of icing sugar
  • 2 tbsp of cocoa powder
  • 1 tbsp of water
  • 1 tsp of vanilla extract
Steps
  1. Preheat oven to 180° Fan forced (200° Conventional) line the muffin tins with paper cups
  2. Put all veggies and milk in blender and blitz until smooth. Add cocoa and blitz again.
  3. Put butter (melted) and sugar in a large bowl and whisked until combined. Pour in the veggie mixture and whisk again until smooth.
  4. Sift in flour, bicarb and baking soda and stir until smooth. Stir in oats. Bake for 30 mins or until cooked when tested with a skewer.
  5. To make icing, put all ingredients in a bowl and mix until smooth
  6. Drizzle cupcakes with icing and top with berries or 100s and 1000s.
