  • 1 (14 ounce can) crushed tomatoes
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon ancho chili powder
  • ¾ cup uncooked quinoa, rinsed under cold water
  • 1 cup corn kernels, fresh or frozen and thawed
  • 1 (14 ounce) can black beans, drained and rinsed
  • 1 (14 ounce) can pinto beans, drained and rinsed
  • ½ to 1 teaspoon liquid smoke, or to taste (optional)
  • Salt and pepper to taste
