Warm Moroccan Carrot and Date Salad
Ingredients
  • 2 tbsp extra virgin olive oil
  • 1 small red onion, finely chopped
  • 2 tsp Moroccan seasoning
  • 1 cup white long-grain rice, rinsed
  • 125g can chickpeas, drained, rinsed
  • ¼ cup orange juice
  • 1 carrot, grated
  • 3 fresh dates, pitted, finely chopped
  • ¼ cup fresh flat-leaf parsley leaves, roughly chopped, plus extra fresh sprigs to serve
  • ¼ cup fresh mint leaves, roughly chopped, plus extra fresh sprigs, to serve
  • 2 tbsp pistachio kernels, toasted, chopped
  • 1 tsp orange zest
