Rox Box Veggie Patties
Ingredients
  • 15 oz can black beans rinsed and drained
  • 15 oz can chickpeas, rinsed and drained
  • 1 large carrot, peeled and chopped
  • 1 red bell pepper, chopped
  • 3 cloves of garlic, minced
  • 1 large onion (half chopped for patty mixture, half sliced and reserved for topping option)
  • 1 egg
  • 2 green onion stems, trimmed and chopped
  • 1 tsp. liquid smoke
  • 1 tsp.salt
  • 1 tsp. ground pepper.
Steps
  1. Preheat oven to 425F.
  2. Process beans until smooth, add rest of ingredients. Make 4 equal-sized balls of veggie-bean mixture and flatten into circles on a non-stick baking sheet. Bake about 30 minutes until solid. Tops will appear dry.
