Ingredients

  • 1 cup - yellow corn meal
  • 1 teaspoon - Italian seasoning
  • 4 cups - water

  • 1 bunch - fresh basil, stemmed and torn up
  • 1 block - firm tofu (optional, gives it that quiche/egg texture)
  • 2 teaspoons - champagne vinegar or rice vinegar
  • 2 teaspoons - nutritional yeast
  • ¼ teaspoon - ground nutmeg
  • subheading: Veggie Mix:
  • 2 - leeks, white parts
  • 1 to 2 cloves - garlic
  • 8 oz - mushrooms
  • 1 to 2 - small zucchini
  • black pepper to taste
  • subheading: And on top:
  • 2 - tomatoes sliced
  • bread crumbs sprinkled (optional)
  • fresh chopped herbs like parsley, basil, thyme, rosemary, oregano
  • subheading: Random Dillon Cream Sauce (measurements unknown…you got this.):
  • soy milk
  • cooked garbanzo beans or cashews if you want more fat in there
  • lemon juice and zest
  • fresh tarragon
  • 2 to 3 shallots, diced fine and sautéed
  • maybe throw in a little vinegar like apple cider, champagne vinegar, rice vinegar
