Italian sausage and peppers
Ingredients
  • 1 lb mild Italian Sausage
  • 1 tsp olive oil
  • 1 medium onion, cut into wedges
  • 1 clove garlic
  • 1 can diced Italian tomatoes
  • 2 green peppers, cut into strips
Steps
  1. With fork, prick Italian sausage, put in Dutch oven and add water to cover. Simmer uncovered 5 to 6 mins; drain. Cut into 2 inch pieces
  2. In same Dutch oven, cook sausage 5 mins in olive oil with onion and garlic till brown. Add green peppers after 3 mins.
  3. Add tomatoes,cover and simmer 20 to 25 mins.
