Quiche Lorraine

Ingredients
  • 1¼ cups all-purpose flour
  • ⅓ cup butter
  • 2 tbsp ice water
  •  
  • subheading: Filling:
  • 3 eggs
  • 1¼ cups whipping cream
  • 1 tsp mixed herbs
  • dash black pepper
  • dash salt
  • 1 cup diced smoked ham
  • 1½ cups grated Cheddar or Jarlsberg cheese
  • Dash paprika
Steps
  1. Measure flour into a bowl. Cut in butter with a pastry blender until coarse crumbs form. Add ice water, mixing with a fork until dough forms a ball. Wrap. Chill for 1 hour.
  2. Roll dough out to fit bottom and sides of a 9-inch quiche pan. Prick dough with a fork. Bake pie shell at 425 degrees for about 10 minutes.
  3. For filling, beat eggs and cream. Add spices, ham and cheese. Pour mixture into prefaced pie shell. Sprinkle with paprika. Bake at 400 degrees for about 25 minutes or until set.
Notes
  • Prep: Fairly hard. Cost: Fairly inexpensive. Prep time: 1 ¾ hours total. 1 hour chilling time; 35 minutes baking time. Good served with: a green salad and red wine or beer if desired.
