Pressure Cooker Beef Shank (Osso Bucco)

  • 4 cloves garlic, crushed
  • 1 tablespoon tomato paste
  • 2 sprigs thyme (or 1 teaspoon dried thyme)
  • ½ teaspoon kosher salt
  • 1 cup chicken stock (preferably homemade)
  • ½ cup dry white wine
  • 15 oz can diced tomatoes

  • 1 clove garlic, minced
  • zest of 1 lemon
  • 1 cup parsley leaves
