  • 2 teaspoons Olive Oil
  • 1 Onion, chopped
  • 2 Cloves Garlic, minced
  • 1 ½ Cups Water
  • 1 Cup Brown Lentils, Rinsed and picked over
  • 2 teaspoons ground Ancho Chile Powder
  • 1 teaspoon ground Cumin
  • 1 teaspoon ground Coriander
  • 1 Tablespoon Cholula, Optional (I skip it for my kids and add to the adult portion after cooking)
  • 3 Tablespoons Tomato Paste
  • ½ teaspoon salt ~ or to taste
  • Squeeze of fresh Lime Juice, optional
