Roasted Pumpkin Couscous
Ingredients
  • 750g butternut pumpkin, peeled, cut into 2cm pieces
  • 1 medium red onion, halved, cut into wedges
  • 1 tablespoon olive oil
  • 2 teaspoons Moroccan seasoning
  • 1 cup couscous
  • 1 Massel chicken style stock cube
  • 1 cup boiling water
  • 2 x 125g cans chickpeas, drained, rinsed
  • ¼ cup toasted pine nuts
  • ¼ cup roughly chopped fresh coriander leaves
