  • 4 cups lower-sodium chicken broth
  • 1 (15 ounce) can no-salt-added crushed tomatoes
  • 1 cup chopped butternut squash or sweet potato (¼-inch)
  • ¾ cup coconut cream (see Tip)
  • 1 tablespoon packed light brown sugar
  • 1 tablespoon fresh lime juice
  • 6 cups baby spinach
  • Thinly sliced scallions for garnish
