Apple-Oat Muffins

Ingredients
  • 2 c old-fashioned or quick-cooking oats
  • 1¼ c flour
  • ½ c brown sugar
  • 2 tsp baking powder
  • ¾ tsp baking soda
  • ¾ tsp salt
  • ⅓ tsp ground cinnamon
  • 1 c buttermilk
  • 2 Tbs coconut oil
  • 1 egg, lightly beaten
  • 1 c (1 to 2 medium) Golden Delicious or Granny Smith apples, shredded
  • ½ c walnuts, chopped
Steps
  1. Preheat oven to 400°.
  2. In a large bowl, combine oats, flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In a medium bowl, with fork, beat buttermilk, oil, and egg until well blended; stir in shredded apples.
  4. Add apple mixture to flour mixture, and stir until flour is moistened (batter will be very thick and lumpy). Stir in chopped walnuts.
  5. Spoon batter into muffin cups. Bake 23 to 25 min or until muffins begin to brown and toothpick comes out clean. Remove muffins from pan, serve warm.
