Sweet & Sour Beaf
Based on a Martin Yan recipe
Ingredients
  • Soy chunks
  • Beaf bullion
  • Sugar
  • Black vinegar
  • Onions
  • Garlic Ginger
  • Soy sauce
  • Chili de arbol
  • Chili flakes
  • Corn starch
  • Wood ear, fresh chili, bamboo shoots (optional)
  • Scallions
Steps
  1. Reconstitute soy chunks in beaf bullion and squeeze out as much liquid as possible.
  2. Rinse the chunks with water.
  3. Marinate chunks with chili flakes, soy sauce, oil, corn starch.
  4. Saute onions, garlic, ginger, and chili de arbol.
  5. Add soy chunks and saute.
  6. Add chili flakes, soy sauce, and beaf bullion.
  7. Braise greens on the side of the wok.
  8. Add cornstarch slurry and stir until thickened.
