Ingredients
  • ⅓ cup plus 2 tablespoons sugar, separately
  • One 2-inch piece of fresh lemongrass (tender white and light green parts only), very finely chopped
  • ½ cup store-bought prepare vanilla pudding
  • Juice and zest of 1 small lime
  • 1 teaspoon fine sea salt
  • 1 ¾ cups all purpose flour, plus more as needed
  • 2 ½ teaspoons baking powder
  • ⅔ cup buttermilk*, plus more as needed
  • ½ stick (4 tablespoons) butter, cubed, softened to room temperature (very soft!)
  • Vegetable oil, for frying
  • note: If you don’t have buttermilk, whisk together ⅓ cup low fat or full-fat plain yogurt with ⅓ cup low-fat or whole milk.
