  • 16 ounces sliced baby bella mushrooms
  • 1 medium shallot, finely minced
  • 3 garlic cloves, sliced
  • 8 tablespoons butter, divided
  • ½ teaspoon coarse kosher salt
  • ½ teaspoon ground black pepper
  • ¼ cup dry white wine
  • 1-pint cherry tomatoes, sliced in half
  • 3 teaspoons chopped fresh thyme, or 1 teaspoon dried thyme
  • 2 cups baby spinach
  • 16 ounces gnocchi, shelf-stable
  • ½ cup Parmesan cheese grated
