Chicken Stir-Fry

Ingredients
  • ½ cooked chicken breast, cubed
  • ¼ c each carrots, peppers, shredded cabbage, broccoli, cauliflower,green beans, bok choy
  • 2 cloves garlic, minced
  • 2 tsp fresh ginger, grated
  • 2 to 3 Tbsp tamari sauce (or low sodium soy sauce)
  • 1 tsp turmeric
  • Cayenne pepper to taste
Steps
  1. Heat 1 to 2 Tbsp water in a large pan.
  2. Add all vegetables and tamari. Toss to combine.
  3. Sautée on medium heat until all vibrant in colour, about 6 to 8 minutes.
  4. Add cooked chicken and combine. Cook 2 to 3 minutes to allow chicken to heat through.
  5. Serve.
Notes
  • If adding spinach or kale, add at same time as chicken.
  • To increase servings, simply double, triple or quadruple ingredients.
