Ingredients

  • 1 medium butternut squash, peeled/halved/seeded
  • 5 cloves garlic, sliced
  • 2 to 3 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp nutmeg
  • 2 tsp chopped fresh rosemary
  • 4 pads butter
  • Maple syrup

  • 2 oz soft goat cheese
  • ¾ cup ricotta cheese
  • 1 tbsp olive oil
  • 1 tsp lemon zest or orange zest
  • Squeeze lemon juice
  • ¼ tsp salt
  • Pepper
  • Toppings
  • Chopped dates (3 to 4)
  • Chopped parsley (2 to 3 tbsp)
  • Sunflower seeds (1 to 2 tbsp)
  • Olive oil
  • 1️⃣Preheat the oven to 425. Line a sheet pan with parchment paper, drizzle with olive oil and set aside.
