Sausage and Gnocchi with Cream Sauce

  • 2 veggie Italian sausage
  • 1 shallot, peeled and minced
  • 1 tablespoon unsalted butter
  • 6 ounces baby bella (cremini) mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 ounces baby spinach, about 2 handfuls
  • pinch salt
  • pinch freshly ground black pepper
  • ¼ teaspoon crushed red pepper flakes, or to taste
  • ½ cup heavy cream (whipping cream)
  • ¼ cup low sodium vegetable broth
  • ½ cup grated Parmesan cheese, plus more to taste for optional garnish
  • Chopped fresh parsley leaves, garnish to taste (optional)
