Kate's Meal Plan: July 8 - 14

RV-Style Meal Plan!
Hello from the road!
Our road trip has officially begun and I am so excited for all of the delicious meals we have planned in the coming days and weeks. We are not planning to eat out very much at all. In fact, we only have 2 must-see restaurant trips planned throughout our journeys. We'll be brown-bagging it for lunches on drive days, or when we're out exploring all day.
Last week, a commenter on my weekly meal plan Facebook post mentioned how she cooked and froze some meats and meals before going on a 4-week road trip with her family. She packaged everything up in freezer bags and froze them flat for easy stacking. As a former freezer-cooking fan, I can not believe I had not thought to do that sooner. It's absolutely genius! So, I spent a few hours two days before we hit the road doing my own freezer cooking session. Our small freezer is now packed full and meal time is going to be much easier!
Are you a fan of freezer cooking? I'd love to hear some of your favorite freezer meals, especially the dump-type meals that work really well in the InstantPot or slow cooker. Please share some of your faves in a comment on this week's meal plan Facebook post.
