Ingredients
- 2 Tbsp. olive oil (I used garlic olive oil)
- 1 medium onion, chopped
- 2 to 3 cloves garlic, minces
- 2 to 6 inch corn tortillas, cut into small squares (about an inch)
- 2 Tbsp. chopped fresh cilantro
- 3 tomatoes, chopped
- 1 - 15 oz can black beans, rinsed and drained
- 1 c. frozen corn
- 4 c. chicken broth
- 2 tsp. chili powder
- 1 tsp. ground cumin
- ΒΌ tsp. cayenne pepper
- 1 bay leaf
- 3 chicken breasts (roughly a pound total)
