cabbage roll soup, IP
Ingredients
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • ½ lb ground pork
  • ¾ cup uncooked long-grain rice
  • 1 medium cabbage, core removed and chopped
  • 1 (28 oz) can diced tomatoes, undrained
  • 2 tbsp tomato paste
  • 2 to 4 cups beef broth
  • 1½ cups V8 or other vegetable juice
  • 1 tbsp Worcestershire sauce
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp paprika or cayenne pepper
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tbsp oil
Steps
  1. Turn pressure cooker on to sauté until hot.  Add 1 tbsp oil and the onions. Sauté about 3 minutes and add the garlic.
  2. Add in the ground pork and beef and brown.  Drain the fat.
  3. Stir in chopped cabbage and all the other ingredients, reserving some beef broth.
  4. Set to 5 (to 10) minutes and natural pressure release.
  5. Remove bay leaf.   Thin as desired with extra broth, add salt and pepper to taste.
  6. subheading: weight watchers' version:
  7. 1 pound hamburger meat
  8. Diced onion
  9. 1 to 2 minced cloves of garlic
  10. Cubed cabbage
  11. 1 can tomato sauce
  12. 1 can diced tomatoes
  13. Sauté the meat, onions, and garlic. Add the remaining ingredients and high pressure for 20 minutes then QR. [me: 20 seems too long.]
Notes
  • this makes a ton!  try half a cabbage.
