Miso Salmon with Sake Butter

  • ½ cup cold unsalted butter, cubed
  • 1 tablespoon sake (Japanese rice wine, such as Momokawa®)
  • ½ teaspoon fresh lime juice
  • kosher salt to taste
  • 1 tablespoon chopped fresh chives
