Winter Squash, White Bean, and Spinach Sauté
Ingredients
  • 2 cups cubed winter squash, skin cut away removed
  • 2 tablespoons olive oil
  • ¼ cup diced white onion
  • 2 garlic cloves, minced
  • ⅓ cup diced tomatoes with juice
  • 1-½ cups low-sodium vegetable broth
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon red pepper flakes
  • 1 (15-ounce) can white beans, drained and rinsed
  • 1-½ cups, packed, fresh spinach
  • 1-¼ teaspoons fresh thyme, chopped
  • ¼ cup grated Parmesan cheese, plus extra for garnish
