Noodles with Spicy Peanut Sauce

Ingredients
  • 1 pound any kind of pasta
  • ⅔ cup peanut butter (I used Jif natural creamy)
  • ¼ cup soy sauce
  • ¼ teaspoon ground red pepper
  • 1 teaspoon sugar or honey (I used honey)
  • 2 tablespoons vinegar
  • 2 cloves garlic, minced (You can use a grater with small holes, it's quicker)
  • ½ to ¾ cup of the pasta water
  • red pepper flakes (optional)
Steps
  1. Bring a pot of water to a boil and throw the pasta in, cook according to directions. While the pasta is boiling, dump all of the other ingredients except for the water into a heat-safe bowl.
  2. When the pasta is done, reserve up to ¾ cup of the cooking water and drain the pasta. Slowly stream the cooking water into the bowl while whisking until you've achieved a smooth sauce. Make it as thick or as thin as you like.
  3. Toss the pasta with the sauce and then serve into 4 individual bowls. Top with red pepper flakes if desired. (I do this every time because I like mine REALLY spicy, and because I think it makes it look nicer.)
