Lime Loaf Cake: Thomasina Miers’ Thai-Style Recipes | Thai Food and Drink

Heat the oven to 180C (160C fan)/350F/gas 4, and grease and line a 900g loaf tin with greaseproof paper.
Ingredients
  • 150g pineapple flesh, fresh or tinned
  • 70g toasted coconut flakes, plus 20g extra to decorate
  • 175g softened unsalted butter
  • 175g golden caster sugar
  • Zest of 2 limes
  • 3 large eggs
  • 160g plain flour
  • 1 tsp baking powder
  • ½ tsp salt

  • For the icing
  • 30ml fresh lime juice, from the zested limes above
  • 100g icing sugar
