Ingredients
  • 1 ½ pounds russet potatoes (about 3 large or 4 small potatoes)
  • 8 tablespoons butter, divided
  • ½ large onion, finely chopped (about a cup)
  • ⅓ red bell pepper, finely chopped (about a ½ cup)
  • 2 cups  homemade cream of chicken soup (store-bought will also work)
  • 2 cups shredded mild cheddar cheese
  • 1 cup sour cream
  • 1 ¼ teaspoons salt, divided
  • 1 teaspoon fresh ground black pepper
  • 1 ½ cups panko breadcrumbs
