Healthy Zucchini Falafel
I used only one cup Cilantro and sprinkled a smidgen more of Cumin.
Ingredients
  • 2 cup grated Zucchini
  • 2 cup Canned Chickpeas , or dry chickpeas, soaked and cooked
  • 2 clove Garlic
  • 2 cup Fresh Cilantro
  • 1 teaspoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • ½ teaspoon Salt , or to taste
