Vegan Greek Salad with Tofu Feta
Ingredients
  • 1.5 cups diced tomato
  • 5 cups lettuce of choice I used butter lettuce mixed with spinach
  • 1.5 cups chopped cucumber
  • ½ cup kalamata olives
  • 1 tbsp Fresh dill garnish
  • 1 cup cooked quinoa
  • ¾ cup crumbled tofu I used sprouted tofu from Trader Joe's
  • ¾ cup sliced red onion
  • salt pepper garlic powder to taste
  • subheading: Dressing:
  • 3 tbsp red wine vinegar
  • 1 tbsp olive oil optional
  • 1 tsp dried oregano
  • 1 tsp dijon mustard
