Slow Cooker Short Rib Ragu over Pappardelle
Ingredients
  • 2 lbs. bone in short ribs
  • salt and pepper to taste
  • ½ cup finely diced carrot 1 large carrot
  • ½ cup finely diced celery 1 stalk of celery
  • ½ cup finely diced yellow onion ½ onion
  • ¼ lb. hunk of pancetta cut into small cubes
  • ¼ tsp. crushed red pepper i like to use ½ tsp. for a little more heat
  • 2 cloves garlic finely chopped
  • 1 tbsp. flour
  • ¼ cup red wine cabernet preferably
  • ½ cup beef broth
  • 1 tsp. anchovy paste
  • 28 oz. can of whole peeled tomatoes (preferably San Marzano Tomatoes)
  • ½ tsp. dried thyme
  • ½ tsp. dried oregano
  • 1 bay leaf
  • 2 tbsp. freshly chopped parsley
  • 2 tbsp. freshly chopped basil
  • 12 oz. pappardelle pasta or tagliatelle is good
  • subheading: For Serving:
  • Good Parmigiano Reggiano freshly grated
  • Parsley chopped loosely
