  • ¼ cup minced fresh sage leaves
  • 3 ½ cups homemade chicken stock or low-sodium broth, divided
  • Kosher salt and freshly ground black pepper
  • 4 eggs
  • ¼ cup minced flat-leaf parsley leaves and tender stems, divided
