Sweet Potato Mac N 'Cheese'
Ingredients
  • ½ package elbows pasta (I used Banza's gluten-free elbows!)
  • 1 large sweet potato (or two small), roasted then peeled
  • ½ cup unsweetened almond milk
  • ½ cup nutritional yeast
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon cumin
  • 2 tablespoons dijon mustard
  • sea salt to taste (I used about ½ teaspoon)
  • black pepper to taste
  • subheading: Toppings (optional):
  • ½ cup Simple Mills sea salt crackers(or other GF cracker), blended into 'crumbs'
  • chopped cilantro, for garnish
  • chopped green onion, for garnish
