Healthy Chicken Pot Pie
Ingredients
  • 4 cups cooked chicken breast shredded or diced (about 2 pounds)
  • 1 medium yellow onion diced
  • 3 stalks celery diced
  • 4 cloves garlic minced
  • 1 ½ to 2 cups fat fat chicken stock
  • ⅓ cup half and half
  • 1 tbsp + 2 tsp cornstarch
  • 4 ounces reduced-fat cream cheese
  • 1 tsp dried thyme
  • ½ tsp ground sage
  • 1 ½ tsp kosher salt
  • 1 tsp cracked black pepper
  • 12 ounces frozen mixed vegetables defrosted and drained
  • 1 sheet frozen puff pastry defrosted according to package directions (about 8 ounces)
