Baked Feta Shakshuka
Ellyn’s note: way too much sauce/water with the given directions. Flavor good, but much too liquidy. Next time drain the tomatoes a little after cooking and only add 1/2 of the crushed tomatoes.
Ingredients
  • 3 pints grape tomatoes
  • 1 red bell pepper, chopped
  • 1 shallot, coarsely chopped
  • 3 cloves garlic, minced
  • ½ tsp dried oregano
  • ¼ cup olive oil, divided
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1 (8-oz) block feta cheese
  • 1½ cups canned crushed tomatoes
  • 6 large eggs
  • 3 Tbsp chopped fresh parsley (or use basil)
