Ingredients
  • USDA Choice Grade chuck roast/ Canada AAA Grade blade roast - 2 inches thick (can use 1 pound to 3 pounds)
  • 4 cloves garlic, minced
  • 2 small onions, sliced
  • 1 cup unsalted homemade chicken stock
  • 1 tablespoon light soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon olive oil
  • 1 pinch of dried rosemary
  • 1 pinch of thyme
  • 2 bay leaves
  • 2 tablespoons red wine or balsamic vinegar to deglaze
  • Kosher salt and ground black pepper to taste
  • 8 white mushrooms, sliced
  • 2 carrots, chopped
  • 2 to 4 potatoes, quartered
  • 1 ½ tablespoon cornstarch mixed with 2 tablespoons water
