Honey Cashew Chicken & Rice
Ingredients
  • 1 tablespoon oil (eg. Olive, peanut or vegetable)
  • 500g chicken thighs, sliced
  • 1 tablespoon cornflour
  • 1 large brown onion, cut into thick slices
  • 3 bunches bok choy, roughly chopped
  • 1 bunch broccolini, roughly chopped
  • 2 cloves garlic, finely chopped
  • 3cm piece ginger, finely chopped
  • ¾ cup roasted salted cashews
  • subheading: Sauce:
  • 3 tablespoons oyster sauce
  • 3 tablespoons soy sauce
  • 1 teaspoon honey
  • 1 teaspoon sesame oil
  •  
  • White or brown rice to serve.
