Ingredients
  • 1 small diced red pepper
  • 1 large handful of shredded carrots
  • ½ C snap peas
  • ¼ white onion chopped
  • 1 C bok choy
  • 3 cloves of garlic, minced
  • 1 TBSP fresh ginger
  • 1 TBSP brown sugar ( I use light brown sugar)
  • ¼ C low sodium soy sauce, tamari, or coconut aminos
  • 2 TBSP vegan chili sauce
  • 2 TBSP sriracha
  • ½ block of tofu cubbed
  • 4 C veggie broth
