Pressure Cooker Boeuf Bourguignonne
Ingredients
  • 1 Tbs. olive oil
  • 3 bacon strips, coarsly chopped
  • 3 lbs. beef bottom round, cut into 1½ inch pieces
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 10 oz. fresh with mushrooms, cut into quarters
  • 4 medium carrots, cut into 1 inch lengths
  • ½ cups chopped shallots
  • 2 garlic cloves
  • 1 cup hearty red wine
  • 2 cups beef stock
  • 1 Tbs. tomato paste
  • 4 Tbs. unsalted butter, at room temperature
  • ¼ cup all purpose flour
