Hawaiian Shoyu Chicken
Ingredients
  • 2 pounds bone-in, skin-on chicken thighs (5 or 6 chicken thighs)
  • 1 cup reduced sodium chicken broth
  • ¾ cup reduced sodium or lite soy sauce
  • ½ cup light brown sugar, packed
  • ⅓ cup mirin
  • ¼ cup rice vinegar (sometimes labeled rice wine vinegar, same thing)
  • 3 to 4 cloves garlic, finely minced
  • 1 tablespoon grated fresh ginger OR 1 ½ teaspoons dried ginger
  • 3 tablespoons water
  • 3 tablespoon cornstarch
  • ¼ teaspoon red pepper flakes, or to taste
  • Thinly sliced green onions (or sesame seeds), optional for garnishing
  • Salt and pepper, to taste if desired
